Vanilla Cupcakes Recipe:
- 125g unsalted butter, softened
- 1/2 cup & 2 tbsp caster sugar
- 1/2 tsp pure vanilla extract
- 2 large eggs, room temperature
- 1 cup flour
- 1 tsp baking powder
- 3 tbsp milk, warmed for 10 seconds in the microwave
- Preheat oven to 180°C. Line a 12 hole muffin pan with cupcake cases.
- Cream the butter and sugar, then beat in the vanilla extract. Beat in the eggs one at a time. Sift in the flour and baking powder and beat. Pour in the warm milk and beat well.
- Bake for 20 minutes.
- 250g unsalted butter, room temperature
- 3 cups icing sugar
- 1/3 cup cocoa powder
- 1 tbsp hot water (optional)
- Beat butter until light and fluffy. Add sifted icing sugar, 1/2 cup at a time. Beat on low speed.
- Sift in the cocoa, and beat until well combined.
- Pipe onto the cool cupcakes.
